Jon, never tried nettles. I once spoke to a guy who fed his colony Holly. It was a big atta. He said that the holly was cut only by the biggest workers and that the spines were not broken down by the fungus so after a while the ants had a fungus garden covered in very effective spines. A novel form of defense I think.
I have found that, in the absence of everything else Acromyrmex will take ivy but it is a far from favourite food. Check out the food lists in the food section of the forum, there are plenty winter foods there.

My lot took soft light green ivy leaves with no trouble but as always, privet remains the favourite.

Atta cephalotes (2019)
Camponotus detritus (2018)
Camponotus maculatus (2018)
